You might be picking out these emerald hued little jewels from your food. But, wait, before you do that anymore! As these are a good source of fibre and potassium, which keeps all of our body cells functioning properly. Just when you thought that green peas are only used to add that extra punch to your savoury dishes, try a rich, creamy matar ki kheer to satiate your sweet buds too!

Ingredients for Veggie Burger Recipe

  • Green peas blanched 4 tablespoons

  • French beans blanched and chopped 4 tablespoons

  • Carrots blanched and chopped 4 tablespoons

  • Corn kernels blanched 4 tablespoons

  • Small cauliflower florets separated and blanched 1

  • Medium potatoes boiled and peeled 3-4

  • Burger buns 4

  • Green chillies 2

  • Garlic 6-7 cloves

  • Ginger roughly chopped 1 inch

  • Salt to taste

  • Black peppercorns crushed to taste

  • White bread 5-6 slices

  • Breadcrumbs for coating

  • Oil to deep fry

  • Butter for applyi

  • Mayonnaise 7-8 tablespoons

  • Green chutney 3-4 tablespoons

  • Cheddar cheese 4 slices

  • Iceberg lettuce leaves shredded A few

  • Medium onion 1

  • Tomato roundels 8 + to serve

Method

Step 1

Finely chop together green peas, French beans, carrots, corn kernels and cauliflower in a chopper.

Step 2

Add green chillies, garlic cloves and ginger and chop finely.

Step 3

Transfer into a bowl. Grate in the potatoes, add salt and crushed black peppercorns and mix well.

Step 4

Heat sufficient oil in a kadai.

Step 5

Crumble bread slices, add to the bowl and mix well. Divide the mixture into equal portions and shape them into patties.

Step 6

Spread the breadcrumbs in a plate, roll the patties in breadcrumbs and slide them into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.

Step 7

Heat a non-stick tawa, halve the burger buns horizontally, place them on the hot tawa and toast, turning sides, till crisp.

Step 8

Apply some butter on the buns and toast for a few more seconds. Remove from heat and set aside on the work top.

Step 9

To make chutney mayonnaise, take mayonnaise in a bowl, and green chutney and mix well.

Step 10

Place a cheese slice on the base half of each bun and top with some lettuce.

Step 11

Slice the onions into roundels and separate into rings. Sprinkle some salt over them and mix. Place a few of them over the lettuce, top with some chutney mayonnaise, a patty, 2 tomato slices, some more chutney mayonnaise and cover with the top half of the buns.

Step 12

Keep the burgers on separate serving plates and serve immediately with crisps, tomato slices and lettuce leaves.
