Ingredients list for Tomato Saar

  • 5-6 large Tomatoes chopped
  • 1 cup Coconut
  • 6 cloves Garlic
  • 1 teaspoon Cumin seeds
  • to taste Salt
  • 1/2 teaspoon Red chilli powder
  • 2 tablespoons Olive oil
  • 1 teaspoon Mustard seeds
  • a pinch Asafoetida
  • 8-10 Curry leaves
  • 3-4 Green chilli slit
  • 2-3 tablespoons Sugar
  • 1/4 cup Fresh coriander leaves chopped

Method

  1. Grind together coconut, garlic and cumin seeds to a paste.
  2. Place tomatoes in a pan with salt and red chilli powder. Add three cups of water and bring it to a boil. Simmer for fifteen minutes and puree when it is a little cool.
  3. Heat olive oil in a pan and add mustard seeds, asafoetida and curry leaves. Add pureed tomatoes and green chillies and bring to a boil. Add sugar. Add coconut-garlic paste and mix well. Simmer on low heat for ten minutes.
  4. Adjust seasoning.
  5. Serve hot, garnished with coriander leaves.
