Ingredients list for Stuffed Capsicum
- 2 medium Mixed Capsicums
- 2 medium Processed Cheese
- 2 medium Potatoes boiled and grated
- 100 grams Paneer (cottage cheese)
- 1/2 cup Cheese grated
- 2 teaspoons Amchur powder
- 12-15 Raisins
- 1 inch piece Ginger chopped
- 2 tablespoons Fresh coriander leaves chopped
- 2 tablespoons Cashewnut powder
- 1 1/2 teaspoons Red chilli powder (deghi mirch)
- 1 teaspoon Garam masala powder
- 3-4 Green chillies chopped
- to taste Salt
- 2 tablespoons Oil
Method
- Slice off the heads of green and red capsicums. Seed them and gently remove the white pith from inside them.
- Mix potatoes, cottage cheese, cheese, dried mango powder, raisins, ginger, cumin powder, coriander leaves, cashewnut powder, red chilli powder, garam masala powder, green chillies and salt in a bowl.
- Stuff this mixture in the both red and green capsicums and press it down firmly.
- Heat oil a grill pan and keep the stuffed capsicum upside down, and press gently with your hand.
- Grill them turning sides so that they cooked evenly all around. Cool, slice them into rings and serve.
