Ingredients list for Stir Fried Garlic Chicken with Coriander
- 400 grams Boneless chicken cut into cubes
- 3 tablespoons Garlic chopped
- ¼ small bunch Fresh coriander leaves with stems
- to taste Salt
- to taste White pepper powder
- 1 tablespoon Dark soy sauce
- 1 Egg
- 2 tablespoons Cornflour/ corn starch
- to deep fry Oil 1 tablespoon +
- 3 Green chillies
- 3 tablespoon Fish sauce
- 1½ teaspoons Sugar
- Lemon juice of ½ lemon
- for garnishing Fresh coriander sprigs
Method
- Take chicken cubes in a bowl. Add salt, 1 tablespoon garlic, pepper powder, ¼ tablespoon soy sauce and egg and mix well. Add cornflour and mix well. Set aside to marinate for 10-15 minutes.
- Heat sufficient oil in a wok. Deep-fry marinated chicken cubes till chicken is fully cooked and golden. Drain on absorbent paper.
- Finely chop coriander stems. Slice green chillies diagonally.
- Heat 1 tablespoon oil in a non-stick wok. Add remaining garlic and green chillies and sauté on high heat till garlic turns light brown.
- Add coriander stems, mix and sauté for 10 seconds. Add remaining soy sauce and fish sauce and toss to mix.
- Add sugar and mix well. Add fried chicken and toss well.
- Finely chop coriander leaves.
- Add lemon juice to the pan and toss. Add coriander leaves and toss again. Switch off heat.
- Serve hot garnished with coriander sprig.
