Spaghetti Prawn Recheado

Racheado is a traditional Goan masala, generally used in fish preparation but it goes well with spaghetti too This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 20-25 prawns (medium),shelled and deveined with tail intact
  • 3 cups boiled spaghetti 
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons oil
  • 5-6 garlic cloves, sliced
  • 20 grams parmesan cheese  + for garnish
  • 1 tablespoon finely chopped fresh coriander leaves 

Recheado masala

  • 8-10 dried red chillies, soaked for 30 minutes
  • 10-12 garlic cloves
  • 1 tablespoon finely chopped ginger 
  • 6-8 black peppercorns
  • 2 teaspoons cumin seeds
  • Salt to taste
  • 1 tablespoon tamarind paste
  • 3 tablespoons malt vinegar

Method

  1. Put red chillies in a blender jar, add garlic, ginger, black peppercorns, cumin seeds, sea salt, tamarind paste, malt vinegar and ¼ cup water and blend to a fine paste.
  2. Take prawns in a bowl, add salt and turmeric powder and mix well.
  3. Heat oil in a non-stick wok , add garlic and sauté for 30 seconds. Add the ground recheado masala, mix well and saute till oil separates.
  4. Add prawns, mix well and cook till prawns are almost done. Add spaghetti and salt, toss well and cook for 3-4 minutes. Grate cheese on top. Add coriander leaves and toss well.
  5. Transfer into a serving bowl, grate parmesan cheese on top, garnish with coriander leaves and serve hot.
