How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Green Tomato Tamarind Rice - SK Khazana Recipe

  • Basmati rice boiled 3 cups

  • Green tomatoes 6 small

  • Tamarind juice 5 tablespoons

  • Ghee 3 tablespoons

  • Mustard seeds 1 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Asafoetida 1/2 teaspoon

  • Curry leaves 10-12

  • Split skinless black gram (dhuli urad dal) 1 teaspoon

  • Green chillies slit 3-4

  • Ginger finely chopped 1 inch

  • Split Bengal gram (chana dal) 1 1/2 teaspoons

  • Raw peanuts crushed 2 tablespoons

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Discard the eye of the tomatoes and cut them into wedges. Set aside.

Step 2

Heat ghee in a wide pan, add mustard seeds, cumin seeds, asafoetida and curry leaves, mix and saute for a few seconds.

Step 3

Add split black grams, green chillies, ginger, split Bengal gram and peanuts, mix and saute for 1 minute.

Step 4

Add green tomato wedges and salt, mix well. cover and cook till tomatoes soften.

Step 5

Add ¼ cup water and mix well. Add Tata Sampann Turmeric Powder and mix well.

Step 6

Add tamarind juice and mix well. Add cooked basmati rice and mix well.

Step 7

Add salt and coriander leaves and toss well. Take the pan off the heat.

Step 8

Transfer on to a serving plate, garnish with coriander leaves and serve hot.
