The traditional food in Madhya Pradesh differs from region to region. In Bhopal, which has a strong Muslim influence, one can eat food that is rich in spices and is famous for its kebabs, Biryani, korma, keema, etc. It is famous for its fish and meat delicacies too. While in Indore and Gwalior you will find many milk based food products.

Ingredients for Sev ki Sabzi Recipe

  • Sev hard and thick 1 cup

  • Onion seeds (kalonji) 1/2 teaspoon

  • Oil 1/2 tablespoon

  • Asafoetida 1/4 teaspoon

  • Cloves 2-3

  • Onion finely chopped 1 medium

  • Green chillies 2

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Tamarind pulp 1 teaspoon

  • Grated jaggery 2 teaspoons

  • Fresh coriander sprigs 7-8

  • Green capsicum strips for garnishing


Step 1

Heat oil in a Wonderchef Granite Frying Pan, add asafoetida, onion seeds, cloves and onion, mix and sauté till the onion is lightly browned.

Step 2

Finely chop green chillies and add along with ½ cup water, salt, turmeric powder, red chilli powder, tamarind pulp and jaggery. Mix well and bring the mixture to a boil.

Step 3

Add sev and mix well. Cook for a minute.

Step 4

Roughly chop coriander sprigs and add. Mix well and cook for 2-3 minutes.

Step 5

Transfer into a serving bowl, garnish with capsicum strips and serve hot.
