Ingredients list for Purple Yam Wadiyaan
- 250 grams Purple Yam peeled and cut into small cubes
- 3 Punjabi Wadis deep fried and soaked in water
- 2 tablespoons Oil
- 1/2 teaspoons Cumin seeds
- 1/4 teaspoon Asafoetida
- 3-4 Green chillies cut lengthwise
- 1 inch Ginger finely chopped
- 1 tablespoon Coriander powder
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Red chilli powder
- 1/4 teaspoon Cumin powder
- to taste Salt
- Juice of ½ lemon
- 2 tablespoons Fresh coriander leaves finely chopped
Method
- Heat oil in a non-stick pan, add cumin seeds and asafoetida and sauté till fragrant. Add green chillies and ginger and sauté for a minute.
- Add purple yam and sauté for 3-4 minutes. Add coriander powder, turmeric powder, red chilli powder, cumin powder, salt and mix well and sauté for a minute.
- Break the wadis and add to the pan. Add lemon juice and coriander leaves and mix well.
- Transfer into a serving bowl and serve hot.
