Good old potato bhaji is always a great idea and along with simple chapatti this simple potato sabzi makes a simple delicious meal. Boiled potatoes sautéed with onions, mustard seeds, curry leaves, green chillies and turmeric – it is a quick delicious aloo ki sabzi recipe.

Ingredients for Potato Bhaji Recipe

  • Potatoes boiled, peeled and diced 4

  • Onion 2 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Green chillies chopped 4

  • Curry leaves 10-12

  • Oil 3 tablespoons

  • Onions sliced 2

  • Ginger finely chopped 1 inch

  • Cashewnuts 12

  • Turmeric powder 1/4 teaspoon

  • Asafoetida a pinch

  • Salt to taste

Method

Step 1

Heat oil in a kadai. Add mustard seeds and when they begin to crackle add green chillies, curry leaves, urad dal and sauté till the dal turns golden.

Step 2

Add onions and sauté till translucent. Add ginger and continue to sauté. Add cashewnuts, turmeric powder and asafoetida and stir well. Add potato pieces and salt.

Step 3

While stirring mash the potato pieces lightly. Sprinkle a little water and continue to cook for further two to three minutes.

Step 4

Place this bhaji in the centre of a dosa, roll in both the sides and serve hot with chutney and sambhar.
