Pithla

An ideal accompaniment to bhakri, pithla is so easy and quick to make. Gram flour batter is tempered and slow cooked with Indian spices. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1/2 cup gram flour (besan)
  • 2 tablespoons Oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon finely chopped green chillies 
  • 1 teaspoon finely chopped garlic 
  • 8-10 curry leaves
  • 2 medium onions, finely chopped
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • Salt to taste
  • 1 teaspoon lemon juice
  • 1 tablespooon finely chopped fresh coriander leaves + to garnish 

Method

  1. Heat oil in a non-stick pan. Add cumin seeds, green chillies, ginger and curry leaves and sauté well. Add onions, mix and sauté till they turn light brown.
  2. Add gram flour, mix well and cook for 4-5 minutes. Add turmeric powder, chilli powder, mix and cook for another 5-6 minutes.
  3. Add salt and lemon juice and mix. Add 1 cup water, mix till smooth, cover and cook for 5-6 minutes. Add coriander leaves and remove from heat.
  4. Transfer into a serving bowl, garnish with coriander leaves and serve hot.
