Ingredients
- Toasted pav Slices as required
- 2 tablespoons pav bhaji masala
- 3 medium potatoes , boiled, peeled and mashed
- 1/4 cup grated mozzarella cheese
- 1/4 cup grated processed cheese
- 2 tablespoons oil
- 4 tablespoons butter
- 1 large onion , finely chopped
- 1 tablespoon ginger-garlic paste
- 2 medium tomatoes , finely chopped
- 1-2 green chillies, chopped
- 1/2 cup tomato puree
- 2 tablespoons red chilli paste
- 1/2 cup grated cauliflower
- 1/2 cup blanched green peas
- 1 small capsicum , finely chopped
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves
- Fresh coriander sprig for garnish
- Lemon wedges to serve
Method
- Preheat the oven at 180˚C.
- Heat oil and 2 tbsps butter in a non-stick pan, add onion and sauté till golden brown. Add ginger-garlic paste and mix well. Cook for a minute.
- Add tomatoes and green chillies and mix well. Cook till pulpy.
Add tomato puree, mix and cook till the oil separates. - Add red chilli paste, cauliflower, green peas, and mix well. Add potatoes, capsicum, salt and pav bhaji Masala and mix well. Mash the mixture using a masher and cook for 1-2 minutes.
- Add 1 cup water and mix well and cook for 1-2 minutes. Add remaining butter and mix, add coriander leaves and mix well. Take the pan off the heat.
- Transfer the mixture into a small oven proof pan, sprinkle mozzarella cheese and processed cheese on top. Bake for 10-15 minutes.
- Garnish with coriander sprig and serve hot with toasted pav slices and lemon wedges.
