By Sanjeev Kapoor 25 Feb 2016 in Recipes Course New Update Main Ingredients Cottage cheese, Almonds Cuisine Indian Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Paneer With Nuts 400 grams Cottage cheese 6-8 Almonds 6-8 Cashewnuts 1 tablespoon Pine nuts(chilgoza) 2 large Tomatoes a few sprigs Fresh coriander leaves 2 tablespoons Ghee 1 teaspoon Cumin seeds 1 teaspoon Red chilli powder 1/2 teaspoon Turmeric powder 1/2 teaspoon Coriander powder 1/2 teaspoon Garam masala powder to taste Salt 1 teaspoon Suger Method Cut cottage cheese into one inch sized diamonds and keep aside. Blanch tomatoes in boiling water for two to three minutes, refresh, remove skin and chop finely. Clean, wash and finely chop coriander leaves. Blanch almonds in boiling water for two minutes. Drain, peel and cut into slivers. Slit cashewnuts in two. Heat two tablespoons of ghee in a kadai, add cumin seeds. When they change colour add almond slivers, cashewnuts and pine nuts and sauté till pink. Add the chopped tomatoes, red chilli powder, turmeric powder, coriander powder, garam masala powder and salt and cook on medium heat for two to three minutes. Add ginger powder and sugar and continue to sauté for another minute. Add the cottage cheese pieces and cook on low heat for another minute stirring gently till oil leaves the masala. Serve hot garnished with chopped coriander.
