Ingredients list for Nutty Tomato Rice
- 3 tablespoons Raw peanuts
- 2 medium Tomatoes pureed
- 3 cups Cooked rice
- 1/2 cups Moong sprouts
- 1 tablespoon Oil
- 1 teaspoon Cumin seeds
- 1 medium Onion finely chopped
- 2 teaspoons Garlic paste
- 8-10 French beans finely chopped
- 1 medium Carrot grated
- a pinch Turmeric powder
- to taste Salt
- 1 tablespoon Lemon juice
- 1/2 teaspoon Garam masala powder
- 2 tablespoons Fresh coriander leaves chopped
Method
- Heat oil in a non-stick wok, add cumin seeds and when they change colour, add onion and garlic paste and sauté till onion is golden brown.
- Add tomato puree and cook till the oil separates.
- Add moong sprouts, peanuts, French beans, carrots and mix well.
- Add turmeric powder and mix.Add half cup water, salt, cover and cook till the vegetables are done.
- Add rice and toss well. Add lemon juice and mix.
- Sprinkle garam masala powder and mix. Cook till the rice is heated through.
- Serve hot garnished with coriander leaves.
