By Sanjeev Kapoor 08 Mar 2019 in Recipes Course New Update Main Ingredients Raw peanuts, Tomatoes Cuisine Indian Course Rice Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Advertisment Ingredients list for Nutty Tomato Rice 3 tablespoons Raw peanuts 2 medium Tomatoes pureed 3 cups Cooked rice 1/2 cups Moong sprouts 1 tablespoon Oil 1 teaspoon Cumin seeds 1 medium Onion finely chopped 2 teaspoons Garlic paste 8-10 French beans finely chopped 1 medium Carrot grated a pinch Turmeric powder to taste Salt 1 tablespoon Lemon juice 1/2 teaspoon Garam masala powder 2 tablespoons Fresh coriander leaves chopped Method Advertisment Heat oil in a non-stick wok, add cumin seeds and when they change colour, add onion and garlic paste and sauté till onion is golden brown. Add tomato puree and cook till the oil separates. Add moong sprouts, peanuts, French beans, carrots and mix well. Add turmeric powder and mix.Add half cup water, salt, cover and cook till the vegetables are done. Add rice and toss well. Add lemon juice and mix. Sprinkle garam masala powder and mix. Cook till the rice is heated through. Serve hot garnished with coriander leaves.
