  • 1 1/2 tablespoons Pav bhaji masala
  • 3/4 cup Mozzarella cheese , grated
  • 1 medium Potato , boiled, peeled and grated
  • 200 grams Refined flour (madia)
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1 tablespoon Fresh coriander leaves , finely chopped
  • 8-10 cloves Garlic , chopped
  • 1 tablespoon Sugar
  • 80 millilitres Warm milk
  • 1/4 small Small overripe banana , mashed
  • 1 teaspoon Fresh yeast
  • 1 tablespoon Lemon juice
  • 30 grams Butter , softened
  • to grease Oil
  • to taste Chaat masala
  • for brushi Butter , melted

Method

  1. Sift refined flour, salt, turmeric powder, red chilli powder and pav bhaji masala into a large bowl. Add coriander leaves, and garlic and mix well.
  2. Mix together sugar, warm milk, mashed banana and yeast in a small bowl and set aside to prove for 15-20 minutes.
  3. Add the yeast mixture to the flour mixture and mix well. Add the lemon juice and butter and knead into a soft dough.
  4. Mix lemon juice and butter in another small bowl. Knead the dough well, grease with oil and cover with a muslin cloth and allow to prove for 20- 30 minutes.
  5. In a yet another bowl mix together potato, chaat masala, salt and half the grated cheese.
  6. Knock back the dough and divide into equal portions. Roll out both the portions into ½ inch thick roundels.
  7. Place one dough roundel on a baking tray, place some potato mixture in the centre of a dough roundel and spread it outwards, leaving half an inch from the edges.
  8. Now spread the grated cheese over the potato mix. Apply water to the edges of the roundel, keep the 2nd rolled-out dough over it and press the edges to seal.
  9. Brush it with a mixture of butter and oil, cover it with a muslin cloth and keep it aside to rise again for another 15-20 minutes.
  10. Preheat oven to 180º C.
  11. Brush the above layer with a mix of oil and butter, place the baking tray in the preheated oven and bake this for 30-40 minutes.
  12. Allow to cool and demould, and serve hot.
