Ingredients
- 1 cup rice flour
- ½ cup refined flour (maida)
- ¼ cup semolina (rawa/suji)
- 2 medium onion peeled
- 2 green chillies
- 6-7 curry leaves
- A handful of coriander leaves
- Salt to taste
- 2 tablespoons white sesame seeds
- 2 tablespoons roasted peanuts
- 2 inch piece ginger finely chopped
- ¼ cup oil + for deep frying
- Coconut chutney to serve
- Coffee to serve
Method
- Heat sufficient oil in a kadai.
- Finely slice onions and finely chop green chillies. Finely chop curry leaves and coriander leaves and transfer all of these into a large bowl.
- Add salt and mix well with your hand. Add rice flour, refined flour, semolina, white sesame seeds, peanuts and ginger and mix well. Add coriander leaves and mix well. Add ¼ cup oil and mix till it forms a dough.
- Take a portion of the mixture and shape it into a ball. Place it between two plastic sheets and press to form a thin disc. Gently remove and keep on a plate Make more vade similarly.Slide them into hot oil, a few at a time, and deep fry on low heat till golden brown and crisp. Drain on absorbent paper.
- Transfer them onto a serving plate and serve hot with coconut chutney and a cup of hot coffee.
