Ingredients
- 3 medium cucumbers, peeled and cut into 1 cm cubes
- 2 tablespoons scraped fresh coconut
- 1 tablespoon garlic paste
- 1/2 tablespoon ginger paste
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh coriander leaves
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 5 curry leaves
- A pinch of asafoetida
- 2 green chillies, chopped
- Salt to taste
Method
- In a bowl mix together cucumber, chillies, garlic paste, ginger paste, lemon juice and fresh coriander. Mix well.
- Heat oil in a non stick pan. Add cumin seeds, curry leaves and asafetida. Saute for a minute. Add to the above mixture.
- Add coconut and salt. Mix well. Chill and serve.
