How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Ghee Rice-SK Khazana Recipe

  • Basmati rice soaked and drained 1 1/2 cups

  • Ghee 2 tablespoons

  • Bay leaves 2

  • Green cardamoms 3

  • Cinnamon 1 inch

  • Star anise 1

  • Cloves 4-5

  • Fennel seeds (saunf) 1 teaspoon

  • Ginger grated 1 teaspoon

  • Raisins 6-8

  • Cashewnuts 8-10

  • Large onion sliced 1

  • Curry leaves 1 sprig

  • Salt to taste

  • Curry leaves fried 1 sprig

Method

Step 1

Heat ghee in a non-stick pan. Add bay leaves, cardamoms, cinnamon, star anise, cloves, fennel seeds and ginger, mix and sauté till fragrant.

Step 2

Add raisins, cashewnuts and onion and mix well. Cover and sauté till onions turn golden brown.

Step 3

Add curry leaves and mix. Add rice and mix well. Add 3 cups water, salt, mix, cover and cook till the rice is fully done.

Step 4

Transfer into a serving bowl, garnish with fried curry leaf sprig and serve.
