Ingredients list for Fish With Pear Chutney
- 2 Rawas Indian salmon (rawas) fillets
- Pears
- 2 large Pears
- to taste Salt
- 1 tablespoon Lemon juice
- 1/2 inch piece Ginger chopped
- 2 tablespoons Fresh coriander leaves
- 1/4 teaspoon White pepper powder
- 1 blade Mace
- 2 Green cardamoms
- 1 Black cardamom
- 1 Star anise
- 1/2 inch stick Cinnamon
- 1/2 teaspoon Crushed red chillies
- 1 teaspoon Raisins
- 1 teaspoon Sugar
- 2 teaspoons Vinegar
- 2 tablespoons Oil
Method
- Chop one pear and puree the other. Rub salt and lemon juice on the fish fillets and set aside for fifteen minutes.
- Mix together half the ginger, coriander leaves, salt and white pepper powder well. Roll the fish in this mixture and set aside.
- Make a potli of mace, green cardamoms, black cardamom, star anise, cinnamon and the remaining ginger. Take chopped pear in a pan along with the spice potli, one cup of water, salt, crushed red chillies, raisins and sugar and cook on medium heat for about five minutes stirring a few times.
- Add pear puree and continue to cook for two to three minutes. Add vinegar and cook till the mixture reduces and gets a chutney consistency.
- Heat oil in a pan and add the marinated salmon fillets and cook on high heat for two minutes on either side. Add the remaining marinade and transfer the fish pieces onto a plate.
- Pour the pear chutney over it and serve hot.
