Ingredients list for Dragon Chicken

  • ½ cup Cashewnuts fried
  • 3 Boneless chicken breasts
  • to taste Salt
  • 1 teaspoon Red chilli powder
  • 1½ teaspoon Garam masala powder
  • to taste Crushed black peppercorns
  • 1 tablespoon Ginger-garlic paste
  • + to deep fry Oil 1 tablespoon
  • 1 tablespoon Cornflour/ corn starch
  • ½ cup Chicken stock
  • 1 tablespoon Refined flour (maida)
  • as required Chicken stock
  • ½ Yellow bell pepper medium
  • ½ Red bell pepper medium
  • 2 medium Tomatoes
  • 1 teaspoon Ginger chopped
  • 1-2 Green chillies chopped
  • tablespoon Garlic chopped
  • ½ cup Spring onion bulbs chopped
  • cup Tomato ketchup
  • 1 teaspoon Soy sauce
  • 1 teaspoon Vinegar
  • ½ cup Spring onion greens chopped


  1. Thinly slice chicken breasts and put into a bowl. Add salt, ½ teaspoon chilli powder, 1 teaspoon garam masala powder, crushed peppercorns and ginger-garlic paste and mix well. Set aside to marinate for 30 minutes.
  2. Heat sufficient oil in a pan.
  3. Add cornstarch and refined flour and some chicken stock to the chicken and mix well.
  4. Deep-fry chicken in hot oil till golden and crisp. Drain on absorbent paper.
  5. Cut bell peppers into triangles. Deseed and cut tomatoes into triangles.
  6. To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger and sauté for 30 seconds. Add green chillies, mix and sauté for 10-15 seconds. Add garlic, mix and sauté till golden.
  7. Add spring onion bulbs, toss and sauté till golden. Add tomato and bell pepper triangles and toss.
  8. Add remaining chilli powder, crushed peppercorns and remaining garam masala powder and toss.
