The cuisine of Andhra Pradesh is reputedly the spiciest of all Indian cuisine. Foods include both the original spicy Andhra cooking and Muslim-influenced Hyderabadi cuisine. Rice is the staple diet and is used in a wide variety of ways.
Hyderabadi cuisine is influenced by the Muslim population, which arrived in Andhra centuries ago. Much of the cuisine revolves around meat. It is rich and aromatic, with a liberal use of exotic spices, ghee, nuts and dry fruits.

Ingredients for Cucumber Chutney Recipe

  • Cucumbers peeled 2 medium

  • Oil 2 tablespoon

  • Mustard seeds 1/4 teaspoon

  • Cumin seeds 1/4 teaspoon

  • Split Bengal gram (chana dal) 1 teaspoon

  • Split black gram skinless (dhuli urad dal) 1 teaspoon

  • Garlic 5-6 cloves

  • Curry leaves 7-8

  • Asafoetida 1/4 teaspoon

  • Dried red chillies broken 2

  • Salt to taste

  • Green chillies 2

  • Tamarind pulp 1 1/2 teaspoons


Step 1

Heat oil in a non stick pan, add mustard seeds, cumin seeds, chana dal, urad dal, garlic cloves, curry leaves, asafoetida, red chillies and saute till fragrant.

Step 2

Roughly chop cucumbers and add and saute for 1 minute. Add salt and green chillies and mix well.

Step 3

Cool slightly and transfer into a mixer jar. Add tamarind pulp and grind coarsely. Transfer into a serving bowl and serve.
