Ingredients list for Country Style Chicken Stew
- 750 grams Chicken on the bone cut into medium pieces
- 1 tablespoon Whole wheat flour (atta)
- 2 tablespoons Oil
- 1 tablespoon Garlic chopped
- 4 Cloves
- 2 Bay leaves
- 4 Black peppercorns
- 1 medium Carrot cut into small batons
- 8-10 Cauliflower florets
- 10 Shallots
- 1 stalk Celery cut into 1 inch pieces
- 4-5 French beans cut into ½ inch pieces
- 1 medium Turnips peeled and cut into small batons
- 1 medium Potato peeled and thickly sliced
- to taste Salt
- to taste Black pepper powder
- for garnishing Fresh parsley sprigs, 2-3 +
Method
- Heat oil in a non-stick pan. Add garlic and sauté for 10 seconds. Add flour and mix well. Add chicken, mix and sauté for a minute. Add 2 cups water and mix well.
- In a muslin cloth, add cloves, bay leaf and peppercorns and tie it into a small bag. Add this to the pan, stir, cover and cook for 5 minutes.
- Add carrot, cauliflower, shallots, celery, beans, turnip and potato, stir to mix. Add salt and mix well. Cover and cook for 2-3 minutes.
- Add pepper powder and mix well.
- Roughly chop parsley, add, mix and cook for 2 minutes. Discard the spice bag.
- Garnish with parsley sprig and serve hot.
