Ingredients list for Cottage Cheese Fajita
- 300 grams Paneer (cottage cheese)
- 4 Tortillas
- 1 teaspoon Paprika smoked
- 1½ teaspoons Red chilli powder
- ½ teaspoon Garlic Powder
- ½ teaspoon Onion powder
- ½ teaspoon Cumin powder
- ½ teaspoon Sugar
- to taste Salt
- Onions cut into thick slices
- 1 small Red pepper cut into strips
- 1 small Yellow pepper cut into strips
- 1 small Green capsicum cut into strips
- Lemon juice of 1 lemon
- 1 large Tomato chopped
- 1 Spring onions with greens chopped
- to taste Crushed black peppercorns
- Fresh coriander leaves
- 1 tablespoon Olive oil
- a few Iceberg lettuce leaves
- 2 tablespoons Sour cream
Method
- Combine the smoked paprika, chilli powder, garlic powder, onion powder, cumin powder, sugar and salt in a bowl and mix well.
- 2. Combine the onions, red and yellow peppers, capsicum, juice of half a lemon and half of the dry spice mix in another bowl and mix. Set aside for ten minutes.
- To make the salsa, combine the tomato, spring onion with greens, remaining lemon juice, salt, crushed peppercorns and coriander leaves in a bowl and mix well.
- Cut the cottage cheese into long strips. Sprinkle the remaining dry spice mix on the strips.
- 5. Heat half tablespoon oil in a non-stick grill pan. Place the cottage cheese strips and grill lightly.
- Add the remaining oil to the same pan and add the vegetables. Toss on high heat for two to three minutes. Remove from heat and set aside.
- Slightly warm the tortillas on a non-stick pan.
- Place a tortilla on the worktop. Put the lettuce, top with grilled vegetables and grilled cottage cheese and add some salsa. Drizzle half tablespoon of sour cream and wrap.
- Serve immediately.
