Cottage Cheese Fajita

Ingredients list for Cottage Cheese Fajita

  • 300 grams Paneer (cottage cheese)
  • 4 Tortillas
  • 1 teaspoon Paprika smoked
  • 1½ teaspoons Red chilli powder
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion powder
  • ½ teaspoon Cumin powder
  • ½ teaspoon Sugar
  • to taste Salt
  • Onions cut into thick slices
  • 1 small Red pepper cut into strips
  • 1 small Yellow pepper cut into strips
  • 1 small Green capsicum cut into strips
  • Lemon juice of 1 lemon
  • 1 large Tomato chopped
  • 1 Spring onions with greens chopped
  • to taste Crushed black peppercorns
  • Fresh coriander leaves
  • 1 tablespoon Olive oil
  • a few Iceberg lettuce leaves
  • 2 tablespoons Sour cream


  1. Combine the smoked paprika, chilli powder, garlic powder, onion powder, cumin powder, sugar and salt in a bowl and mix well.
  2. 2. Combine the onions, red and yellow peppers, capsicum, juice of half a lemon and half of the dry spice mix in another bowl and mix. Set aside for ten minutes.
  3. To make the salsa, combine the tomato, spring onion with greens, remaining lemon juice, salt, crushed peppercorns and coriander leaves in a bowl and mix well.
  4. Cut the cottage cheese into long strips. Sprinkle the remaining dry spice mix on the strips.
  5. 5. Heat half tablespoon oil in a non-stick grill pan. Place the cottage cheese strips and grill lightly.
  6. Add the remaining oil to the same pan and add the vegetables. Toss on high heat for two to three minutes. Remove from heat and set aside.
  7. Slightly warm the tortillas on a non-stick pan.
  8. Place a tortilla on the worktop. Put the lettuce, top with grilled vegetables and grilled cottage cheese and add some salsa. Drizzle half tablespoon of sour cream and wrap.
  9. Serve immediately.
