Corn Upma In this upma corn replaces semolina to make an excellent snack. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 19 Oct 2015 in Recipes Course New Update " frameborder="0" allowfullscreen> Advertisment Main Ingredients Corn kernels, Oil Cuisine TamilNadu Course Snacks and Starters Prep Time 0-5 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Corn Upma 2 cups Corn kernels 2 tablespoons Oil 1 teaspoon Mustard seeds 3 Green chillies slit 1/2 teaspoon Asafoetida 6-8 Curry leaves 1/2 teaspoon Turmeric powder 1 medium Onion chopped to taste Salt 1/2 teaspoon Sugar 1 tablespoon Lemon juice 4 tablespoons Scraped coconut 4 tablespoons Fresh coriander chopped Method Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add green chillies, asafoetida, curry leaves, turmeric powder and onions. Sauté till the onions are translucent. Grind the corn with little water into a coarse mixture. Add the ground corn to the pan and mix well. Add salt and mix well, cover and cook on low heat for 4-5 minutes. Add sugar, lemon juice, 1 tablespoon scraped coconut and 1 tablespoon chopped coriander and mix well. Cover and cook for 2 minutes.
