Ingredients

  • 2 red capsicums
  • 2 yellow capsicums
  • 2 green capsicums
  • 2 medium onions
  • 2 cloves garlic
  • 2 tomatoes
  • 2 tablespoons ghee
  • 1 teaspoon mustard seeds
  • 2 green cardamoms
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons sugar

Method

  1. Char the skins of the capsicums in the oven or by holding it over the gas flame with the help of a fork till the skin scorches and blisters.
  2. Leave them aside to cool and then remove the skin, stalk and the seeds. Peel and chop the onion. Peel and crush the garlic cloves. Wash and chop the tomatoes.
  3. Heat ghee in a pan and add mustard seeds and cardamoms. When the mustard seeds start to crackle add the onion and garlic. Sauté till the time the onions are light golden in colour.
  4. Add red chilli powder, turmeric powder and sauté for a minute. Add the chopped tomatoes, salt and sugar. Finally add the capsicum and fry few minutes, stirring occasionally Cover and cook for further three to five minutes.
