Ingredients list for Chutney Vegetable Pulao - SK Khazana
- 1 1/2 cups Basmati rice soaked and drained
 - 2 teaspoons Ghee
 - 2 Bay leaves
 - 3-4 Cloves
 - 5-6 Black peppercorns
 - 2 Medium onions sliced
 - 1 Medium carrot chopped
 - 5-6 French beans chopped
 - 7-8 Cauliflower florets
 - 1/4 cup Green peas blanched
 - 1/2 tablespoon Ginger-garlic paste
 - to serve Raita
 - Green chutney
 - 2 cups Fresh coriander leaves washed and chopped
 - 32 Green chillies
 - 3-4 Garlic cloves
 - 2 tablespoons Fresh coconut scraped
 - 1 tablespoon Lemon juice
 - to taste Salt
 
Method
- Put coriander leaves, green chillies, garlic, scraped coconut, lemon juice and salt in a blender jar, add sufficient water and blend to a fine paste.
 - Heat ghee in a deep non-stick pan, add bay leaves, cloves, black peppercorns and onions, mix and sauté till onions turn golden brown.
 - Add carrot, French beans, cauliflower and green peas, mix well. Add ginger-garlic paste and sauté for a minute.
 - Add the rice and sauté well. Add the chutney, salt and 3 cups water and mix well.
 - Cover and cook for 12-15 minutes.
