Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Chidambaram Gothsu Recipe

  • Brinjals 6 medium

  • Shallots finely chopped 10-12

  • Cumin seeds 1 teaspoon

  • Coriander stems 2 tablespoons

  • Fenugreek seeds (methi dana) 1 teaspoon

  • Split Bengal gram (chana dal) 2 tablespoons

  • Dried red chillies 3-4

  • Asafoetida a pinch

  • Curry leaves 6-8 tablespoons

  • Oil 6

  • Tamarind paste 1 1/2 tablespoons

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste


Step 1

Heat 2 tbsps oil in a small non-stick pan. Add cumin seeds, coriander seeds, fenugreek seeds, split Bengal gram and sauté.

Step 2

Add dried red chillies, asafoetida and mix well. Cool and coarsely grind to a paste with a little water.

Step 3

Heat 4 tbsps oil in another non stick kadai. Add curry leaves and shallots and sauté till golden brown.

Step 4

Cut the brinjals into long slices and add. Add tamarind paste and mix well.

Step 5

Add red chilli powder, turmeric powder, salt and mix well.

Step 6

Add approximately ½ cup water and cook for 2-3 minutes on low heat till brinjals become soft.

Step 7

Add the ground masala and mix well. Cook for 1-2 minutes. Serve hot.
