Ingredients list for Chicken in Burnt Chilli Sauce

  • 450 grams Boneless chicken cubes
  • 1-2 Green chillies finely chopped
  • 2-3 Dried red chillies sliced diagonally
  • 2 tablespoons Red chilli paste
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1 tablespoon Chilli oil
  • 1 inch Ginger finely chopped
  • 2 inch Celery finely chopped
  • 1 tablespoon Garlic finely chopped
  • 1 teaspoon Soy sauce
  • 1/2 cup Capsicum mixed cut in to triangular pieces
  • 1/4 cup Fresh coriander leaves chopped
  • 1 stalk Spring onion greens finely chopped
  • 1 teaspoon Vinegar

Method

  1. Put chicken in a bowl, add salt and crushed peppercorns and mix well. Set aside.
  2. Heat chilli oil in a non-stick pan, adds chicken, mix and cook on high heat till done. Transfer onto a plate.
  3. Add green chillies to the same non-stick pan and sauté for 30 seconds. Add dried red chillies and sauté till fragrant. Add ginger and celery and sauté for 30 seconds. Add garlic and sauté till golden.
  4. Add red chilli paste, mix and cook for a minute or till oil separates. Add some water and mix. Add soy sauce and mix well.
  5. Add chicken and mix. Add bell peppers and mix well. Add salt, crushed peppercorns and mix well.
  6. Add coriander leaves, spring onion greens and vinegar and mix.
  7. Serve hot.
