Ingredients list for Chicken in Burnt Chilli Sauce
- 450 grams Boneless chicken cubes
- 1-2 Green chillies finely chopped
- 2-3 Dried red chillies sliced diagonally
- 2 tablespoons Red chilli paste
- to taste Salt
- to taste Crushed black peppercorns
- 1 tablespoon Chilli oil
- 1 inch Ginger finely chopped
- 2 inch Celery finely chopped
- 1 tablespoon Garlic finely chopped
- 1 teaspoon Soy sauce
- 1/2 cup Capsicum mixed cut in to triangular pieces
- 1/4 cup Fresh coriander leaves chopped
- 1 stalk Spring onion greens finely chopped
- 1 teaspoon Vinegar
Method
- Put chicken in a bowl, add salt and crushed peppercorns and mix well. Set aside.
- Heat chilli oil in a non-stick pan, adds chicken, mix and cook on high heat till done. Transfer onto a plate.
- Add green chillies to the same non-stick pan and sauté for 30 seconds. Add dried red chillies and sauté till fragrant. Add ginger and celery and sauté for 30 seconds. Add garlic and sauté till golden.
- Add red chilli paste, mix and cook for a minute or till oil separates. Add some water and mix. Add soy sauce and mix well.
- Add chicken and mix. Add bell peppers and mix well. Add salt, crushed peppercorns and mix well.
- Add coriander leaves, spring onion greens and vinegar and mix.
- Serve hot.
