Ingredients list for Chicken Meat Balls in Curried Coconut Sauce
- 1 cup Chicken mince
- 2 teaspoons Curry powder
- 1 cup Coconut milk
- 1½ medium Onions
- to shallow fry Oil 1½ teaspoons + 1 tablespoon +
- 1 Fresh red chilli
- 2 teaspoons Garlic chopped
- 1½ teaspoons Celery chopped
- to taste Salt
- to taste Crushed black peppercorns
- 3 White bread slices
- ½ cup Milk
- ½ teaspoons Cumin seeds
- 1 inch Ginger sliced
- 1½ cups Chicken stock
- for garnishing Scraped coconut
Method
- Finely chop onions.
- Heat 1½ teaspoons oil in a non-stick pan.
- Finely chop fresh red chilli.
- Add chopped onion to the pan alongwith garlic, celery and chopped red chilli, mix and saute for 1-2 minutes or till onion turns translucent.
- Take chicken mince in a bowl. Add salt, crushed peppercorns and sautéed vegetables ad mix well.
- Discard edges of bread slices and place in another bowl. Add milk and soak them well.
- Add soaked bread slices to chicken mince mixture and mix well. Divide the mixture into equal portions and shape them into small balls.
- Heat some oil in a non-stick pan. Shallow-fry the chicken meat balls till evenly golden and fully cooked. Drain on absorbent paper.
- Heat 1 tablespoon oil in another non-stick pan. Add cumin seeds, curry powder and saute on low heat.
- Add ginger, chicken stock and stir to mix. Bring to a boil.
- Add coconut milk and stir to mix. Simmer for 2 minutes.
