By Sanjeev Kapoor 02 Sep 2016 in Recipes Course New Update Advertisment Main Ingredients Brinjals, Onions Cuisine Sindhi Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Bhugi 1 large Brinjals chopped 2 medium Onions chopped 2 medium Potatoes peeled and diced ½ cup Green peas 2 tablespoons Oil 2-3 Green chillies chopped 1 inch Ginger chopped ¼ teaspoon Asafoetida ½ teaspoon Garam masala powder ½ teaspoon Red chilli powder 1 teaspoon Coriander powder to taste Salt Advertisment Method Heat oil in a non-stick pan. Add onions and sauté till golden. Add green chillies, ginger and asafoetida and mix well. Add little water and mix well. Add garam masala powder, chilli powder and coriander powder and mix well. Add little water, mix and cook till the oil separates. Add brinjal, potatoes and green peas and mix well. Add little water, mix, cover and cook till the vegetables are fully done. Add salt, mix well and let it get heated through. Serve hot garnished with a coriander sprig.
