Ingredients list for Bhugha Chawar
- 1½ cups Rice soaked
- Simple Indian masalas
- 2 tablespoons Ghee
- 6-8 Cloves
- 4-5 Green cardamoms
- 1 teaspoon Cumin seeds
- ½ inch stick Cinnamon
- 2 Bay leaves
- 2 medium Onions chopped
- ½ teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 1 medium Tomato chopped
- to taste Salt
- for garnish Fresh coriander sprigs
Method
- Heat ghee in a non-stick pan, add cloves, green cardamom, cumin seeds, cinnamon and bay leaves and sauté for a few seconds.
- Add onions and sauté till golden brown. Add turmeric powder and red chilli powder and mix well.
- Add tomato, mix well and cook for two to three minutes.
- Drain and add soaked rice, mix well. Add three cups water and salt, cover and cook for five to ten minutes or till the rice is done.
- Transfer into a serving bowl and serve hot garnished with coriander sprigs.
