Ingredients list for Bhaingan Bhatinda

  • 12-14 Brinjals
  • 2 tablespoons Onions
  • 1 tablespoon Cumin seeds
  • 6-8 Clove
  • 4-5 Green cardamom
  • 15-20 Black peppercorns
  • 1 teaspoon Turmeric powder
  • 3 Onion finely chopped
  • 2-3 tablespoons Oil
  • 1 tablespoons Ginger paste
  • 1 tablespoon Garlic paste
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Garam masala powder
  • to taste Salt
  • 2 Green chilli broken
  • 1 tablespoon Fresh coriander leaves finely chopped


  1. Roast coriander seeds, cumin seeds, cloves, green cardamoms, black peppercorns in a non-stick pan.
  2. Cool and coarsely grind. Slit the brinjals and soak them in water with ½ tsp turmeric powder.
  3. Slice the onions. Heat oil in a non-stick kadai, add onions and sauté till golden brown. Add ginger paste, garlic paste and sauté till fragrant.
  4. Add red chilli powder, remaining turmeric powder, ½ tsp garam masala powder, salt and mix well.
  5. Add brinjals, green chillies and mix. Add a little water and mix. Cover and cook till brinjals are done.
  6. Add the ground masala, remaining garam masala powder, coriander leaves and mix well. Serve hot.
