This recipe is from FoodFood TV channel By Sanjeev Kapoor 19 Jul 2021 in Recipes Course New Update Main Ingredients Potatoes , Matki beans Cuisine Maharashtrian Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Batata Matki Ussal 2 medium Potatoes ,quartered vertically and sliced 1½ cups Matki beans , sprouted 1 medium Onion 2 tablespoons Oil 1/4 teaspoon Asafoetida 1/2 teaspoon Mustard seeds 1 teaspoon Cumin seeds 8-10 Curry leaves 1/4 teaspoon Turmeric powder red to taste Salt 1 teaspoon Red chilli powder 1 /1 2 teaspoons Goda masala powder 1 teaspoon Sugar a few Fresh coriander sprigs 2 tablespoons Coconut , scraped Method Chop onion. Heat oil in a non-stick pan, add asafoetida, mustard seeds, cumin seeds, curry leaves and onion, mix and sauté. Add potatoes and mix. Add turmeric powder and salt and mix well and saute for 1 minute. Add matki and 1 cup water and mix well. Add red chilli powder, goda masala and sugar and mix well. Cover and cook till both potatoes and matki are done. Chop a few sprigs of fresh coriander leaves. When the ussal is almost done, add most of the coriander leaves and coconut and mix well. Transfer the ussal into a serving plate, garnish with coconut and remaining coriander leaves and serve hot.
