Ingredients list for Batata Matki Ussal

  • 2 medium Potatoes ,quartered vertically and sliced
  • 1½ cups Matki beans , sprouted
  • 1 medium Onion
  • 2 tablespoons Oil
  • 1/4 teaspoon Asafoetida
  • 1/2 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 8-10 Curry leaves
  • 1/4 teaspoon Turmeric powder
  • red to taste Salt
  • 1 teaspoon Red chilli powder
  • 1 /1 2 teaspoons Goda masala powder
  • 1 teaspoon Sugar
  • a few Fresh coriander sprigs
  • 2 tablespoons Coconut , scraped


  1. Chop onion.
  2. Heat oil in a non-stick pan, add asafoetida, mustard seeds, cumin seeds, curry leaves and onion, mix and sauté.
  3. Add potatoes and mix. Add turmeric powder and salt and mix well and saute for 1 minute. Add matki and 1 cup water and mix well.
  4. Add red chilli powder, goda masala and sugar and mix well. Cover and cook till both potatoes and matki are done.
  5. Chop a few sprigs of fresh coriander leaves.
  6. When the ussal is almost done, add most of the coriander leaves and coconut and mix well.
  7. Transfer the ussal into a serving plate, garnish with coconut and remaining coriander leaves and serve hot.
