Ingredients list for Batata Matki Ussal
- 2 medium Potatoes ,quartered vertically and sliced
- 1½ cups Matki beans , sprouted
- 1 medium Onion
- 2 tablespoons Oil
- 1/4 teaspoon Asafoetida
- 1/2 teaspoon Mustard seeds
- 1 teaspoon Cumin seeds
- 8-10 Curry leaves
- 1/4 teaspoon Turmeric powder
- red to taste Salt
- 1 teaspoon Red chilli powder
- 1 /1 2 teaspoons Goda masala powder
- 1 teaspoon Sugar
- a few Fresh coriander sprigs
- 2 tablespoons Coconut , scraped
Method
- Chop onion.
- Heat oil in a non-stick pan, add asafoetida, mustard seeds, cumin seeds, curry leaves and onion, mix and sauté.
- Add potatoes and mix. Add turmeric powder and salt and mix well and saute for 1 minute. Add matki and 1 cup water and mix well.
- Add red chilli powder, goda masala and sugar and mix well. Cover and cook till both potatoes and matki are done.
- Chop a few sprigs of fresh coriander leaves.
- When the ussal is almost done, add most of the coriander leaves and coconut and mix well.
- Transfer the ussal into a serving plate, garnish with coconut and remaining coriander leaves and serve hot.
