Ingredients list for Andhra Chicken Fry
- 750 grams Chicken cut into 2 inch pieces on the bone
- ¼ teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 2 teaspoons Coriander powder
- 2 teaspoons Ginger-garlic paste
- to taste Salt
- 2 tablespoons Oil
- 2 Green chillies slit
- 8-10 Curry leaves
- 3 large Onions sliced
- ½ cup Onion paste
- 2 tablespoons Fresh coriander leaves chopped
- Spice powder
- 2-3 Cloves
- ½ inch Cinnamon
- 2-3 Green cardamom
- 1 teaspoon Black peppercorns
Method
- Grind cloves, cinnamon, green cardamoms and black peppercorns to a fine powder.
- Take chicken in a bowl. Add turmeric powder, chilli powder, coriander powder, ginger-garlic paste, the ground spice mix and salt. Mix well and set aside for 15-20 minutes.
- Heat oil in a non-stick pan. Add green chillies, curry leaves and onions and sauté till light golden.
- Add onion paste and sauté for 1minute. Add marinated chicken and sear on high heat for 2 minutes.
- Add ½ cup water, cover and cook for 10-12 minutes or till the chicken is fully done.
- Add coriander leaves, mix well and serve hot.
