Ingredients list for Andhra Chicken Fry

  • 750 grams Chicken cut into 2 inch pieces on the bone
  • ¼ teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 2 teaspoons Coriander powder
  • 2 teaspoons Ginger-garlic paste
  • to taste Salt
  • 2 tablespoons Oil
  • 2 Green chillies slit
  • 8-10 Curry leaves
  • 3 large Onions sliced
  • ½ cup Onion paste
  • 2 tablespoons Fresh coriander leaves chopped
  • Spice powder
  • 2-3 Cloves
  • ½ inch Cinnamon
  • 2-3 Green cardamom
  • 1 teaspoon Black peppercorns

Method

  1. Grind cloves, cinnamon, green cardamoms and black peppercorns to a fine powder.
  2. Take chicken in a bowl. Add turmeric powder, chilli powder, coriander powder, ginger-garlic paste, the ground spice mix and salt. Mix well and set aside for 15-20 minutes.
  3. Heat oil in a non-stick pan. Add green chillies, curry leaves and onions and sauté till light golden.
  4. Add onion paste and sauté for 1minute. Add marinated chicken and sear on high heat for 2 minutes.
  5. Add ½ cup water, cover and cook for 10-12 minutes or till the chicken is fully done.
  6. Add coriander leaves, mix well and serve hot.
