Ingredients list for Anda Bhurji
- 6 Eggs
- 1 tablespoons Butter
- 1/2 tablespoon Oil
- 1 teaspoon Cumin seeds
- 1 medium Onion finely chopped
- 1-2 Green chillies chopped
- 1 medium Tomato finely chopped
- to taste Salt
- 1/4 teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 1 teaspoon Coriander powder
- 1/4 teaspoon Cumin seeds
- 1 tablespoon Fresh coriander leaves chopped
Method
- Heat butter and oil in a non-stick pan. Add cumin seeds and sauté till fragrant. Add onion and green chillies and sauté till onion turns brown.
- Break eggs in a bowl and whisk well.
- Add tomatoes and salt to the pan, mix well and cook on medium heat till tomatoes turn soft and pulpy.
- Add turmeric powder, chilli powder, coriander powder and cumin powder and mix well. Add chopped coriander and mix well. Add eggs, mix and cook on medium heat for 2-3 minutes.
- Serve hot garnished with a coriander sprig.
