Ingredients list for Ambat Batata
- 5-6 medium Potatoes boiled, peeled and cubed
- Kokum petals
- 3 tablespoons Oil
- 1 teaspoon Cumin seeds
- 1/2 teaspoon Mustard seeds
- 10-15 Curry leaves
- 2 medium Onions chopped
- 2 Green chillies chopped
- 1/2 teaspoon Turmeric powder
- to taste Salt
- 1/2 cup Yogurt
- 4-5 Kokum petals
- 1/4 cup Coconut scraped
- 2 teaspoons Lemon juice
Method
- Heat the oil in a non stick pan.
- Add the cumin seeds and mustard seeds. When they splutter add the curry leaves and onions and sauté for a minute. Add the green chillies and turmeric powder and sauté till the onions are lightly coloured.
- Add the potatoes, salt, yogurt and kokum and mix. Cook for two to three minutes. Add the coconut and lemon juice and toss well.
- Serve hot.
