Ingredients list for Aloo Surti Sabzi

  • 4 medium Potatoes boiled, peeled and cut into pieces
  • 1 1/2 cups Surti papdi chopped
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Carom seeds (ajwain)
  • 1/4 cup Fresh green garlic finely chopped
  • 1 1/2 teaspoon Red chilli powder
  • 2 teaspoon Dried mango powder
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Garam masala powder
  • 2 teaspoons Coriander powder
  • 1/2 teaspoon Cumin powder
  • to taste Salt
  • 1/2 small bunch Fresh coriander
  • 3-4 Spring onions bulbs chopped

Method

  1. Heat oil in a non-stick pan. Add cumin seeds and carom seeds and sauté till fragrant. Add chopped green garlic and sauté for 30 seconds.
  2. Add surti papdi, mix and cook for a minute. Add potatoes, toss to mix and cook for 3-4 minutes.
  3. Finely chop coriander.
  4. Add chilli powder, dried mango powder, turmeric powder, garam masala powder, coriander powder, cumin powder and salt, mix and cook till surti papdi are done.
  5. Add spring onion bulbs and mix. Add chopped coriander and mix well.
  6. Serve hot.
