Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Wadi Vegetable Pulao Recipe

  • Spicy urad dal wadis 5

  • French beans cut into diagonals 3-4

  • Medium cauliflower separated into florets 1/4

  • Medium carrot peeled and cut into 1/2 inch cubes 1/2

  • Green peas 2 tablespoons

  • Basmati rice soaked for 30 minutes and drained 1 1/2 cups

  • Oil 2 tablespoons

  • Ghee 2 tablespoons

  • Cloves 6-7

  • Black peppercorns 5-6

  • Cinnamon 1 1/2 inches

  • Bay leaves 2

  • Medium onion finely chopped 1

  • Ginger-green chilli paste 1 teaspoon

  • Medium tomato finely chopped 1

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped to garnish


Step 1

Heat oil in a non-stick pan, add wadis and sauté on medium heat till golden brown. Drain and soak in warm water.

Step 2

Heat ghee in a deep non-stick pan, add cloves, black peppercorns, cinnamon and bay leaves and onion, mix and sauté till onion turns golden.

Step 3

Add ginger-green chilli paste, mix well and saute for 1 minute on medium heat.

Step 4

Add tomato, mix and sauté till tomato turns pulpy. Add French beans, cauliflower florets and carrot, mix well and saute for 2-3 minutes.

Step 5

Add rice and mix well. Add turmeric powder and salt and mix well. Break and add wadis and mix well. Add 3 cups water and green peas. Cover and cook on medium heat for 10-12 minutes or till the rice is cooked.

Step 6

Transfer into a serving plate, garnish with coriander leaves and serve hot.
