Ingredients list for Tahiri-SK Khazana

  • 1 1/2 cups Basmati rice soaked and drained
  • 5-6 Small potatoes halved
  • 10-12 Cauliflower florets
  • 3/4 cup Green peas
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 5-6 Cloves
  • 6-8 Black peppercorns
  • 2-3 Black cardamoms
  • 1 inch Cinnamon
  • 1 Bay leaf
  • 2 Medium onions sliced
  • 1/2 teaspoon Turmeric powder
  • 1 1/2 teaspoons Red chilli powder
  • 1 teaspoon Cumin powder
  • to taste Salt
  • for garnish Fresh coriander sprig

Method

  1. Heat oil in a deep non-stick pan. Add cumin seeds and let the seeds change colour.
  2. Add cloves, peppercorns, cardamoms, cinnamon, bay leaf and onions, mix and sauté till onions turn translucent.
  3. Add potatoes and cauliflower florets and mix well. Add turmeric powder, chilli powder, cumin powder and salt and mix.
  4. Add ½ cup water, mix, cover and cook for 5-6 minutes. Add rice and mix.
  5. Add green peas and mix well. Add 3 cups water, mix, cover and cook till fully done.
  6. Garnish with coriander sprig and serve hot.
