Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Sweet and Sour Gobhi Recipe

  • Cauliflower cut into florets 1 medium

  • Tomatoes pureed 2 large

  • Onion pureed 1 large

  • Ginger-garlic paste 2 teaspoons

  • Salt to taste

  • Honey 2 tablespoons

  • Turmeric powder 1 teaspoon

  • Red chilli powder 2 teaspoons

  • Cumin powder 1 teaspoon

  • Mustard oil 2 tablespoons

  • Ghee 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Black cardamom 2

  • Green cardamom 2 small

  • Clove 3

  • Cinnamon 1 inch stick

  • Bay leaves 2

Method

Step 1

In a bowl mix together cauliflower, tomato puree, onion paste, ginger garlic paste, salt honey, turmeric powder, red chilli powder, cumin powder and mustard oil.

Step 2

Mix well and set aside for one hour.

Step 3

Heat ghee in a non stick pan, add cumin seeds, when they splutter add black and green cardamom, cloves, cinnamon, bay leaves and mix well.

Step 4

Add the marinated cauliflower, saute on high heat for two minutes.

Step 5

Reduce the heat and cover and cook for half an hour or till done.

Step 6

Serve hot.
