Ingredients list for Stir Fried Lemongrass Chicken

  • 300 grams Boneless chicken breasts cut into strips
  • 2 inch Lemon grass stalk
  • + for greasing Oil ½ teaspoon
  • 1 cup Noodles boiled
  • to taste Salt
  • to taste Crushed black peppercorns
  • White sesame seeds for sprinkling
  • 4 teaspoons Sesame oil (til oil)
  • 1 tablespoon Ginger chopped
  • 2 tablespoons Garlic chopped
  • 5-6 Spring onion bulbs sliced
  • 2 Fresh red chillies sliced
  • ½ teaspoon Soy sauce
  • 1 tablespoon Red chilli sauce
  • 2 stalks Spring onion greens
  • 2 tablespoons Cornflour/ corn starch

Method

  1. Preheat oven to180ºC. Grease a baking tray with little oil.
  2. Divide noodles into 8 small equal portions and place them on the greased tray to make nests. Sprinkle salt, crushed peppercorns and sesame seeds on top and put the tray in the preheated oven. Bake till the nests turn crisp and golden.
  3. Heat ½ teaspoon oil and sesame oil in a non-stick wok. Add ginger and garlic and sauté for 1 minute.
  4. Add spring onion bulbs and sauté till they turn translucent. Add red chillies, mix and sauté for 1 minute.

  6. Add chicken and toss on high heat. Add salt, crushed peppercorns and toss again. Add ¾ cup water and mix.
  7. Add soy sauce and chilli sauce and mix well. Add ½ cup water, lower heat and cook till the chicken is done.
  8. Finely chop most of the spring onion greens.
  9. Take cornflour in a bowl. Add sufficient water and mix well to make a smooth slurry.
  10. Add slurry to pan and mix well. Cook till the sauce thickens.
  11. Add chopped spring onion greens and switch off heat. Mix well.
  12. Place noodle nests on a serving platter.
  13. Cut remaining spring greens and lemongrass into thin strips.
  14. Top the noodle nests with chicken sauce, garnish with spring onion strips and lemongrass strips and serve immediately.
