Spicy Vegetable Fingers

A medley of vegetables mixed with cornflour and refined flour, shaped into fingers and deep-fried. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Spicy Vegetable Fingers

  • 1 medium Carrot grated
  • ¼ medium Cauliflower grated
  • 1 small Green capsicum finely chopped
  • ¼ small Cabbage finely chopped
  • 8-10 French beans finely chopped
  • 1 small Onion finely chopped
  • 2 teaspoons Red chilli flakes
  • to taste Salt
  • 5 tablespoons Cornflour/ corn starch
  • 2 tablespoons Refined flour (maida)
  • 2 tablespoons Fresh coriander leaves finely chopped
  • ¼ teaspoon White pepper powder
  • 1 teaspoon Light soy sauce
  • to deep fry Oil

Method

  1. Put carrot, cauliflower, capsicum, cabbage, French beans, onion, salt, cornflour, refined flour, chilli flakes, coriander leaves, white pepper powder and soy sauce in a bowl and mix well.
  2. Heat sufficient oil in a wok.
  3. Divide this mixture into equal portions and roll into balls. Shape each ball into two-inch long fingers and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
  4. Serve hot with tomato ketchup.
