Ingredients 

  • 500 grams brinjals diced
  • 50 grams whole dry red chilli
  • 2 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 teaspoons fenugreek seeds (methi dana)
  • 10 cloves garlic
  • 2 inch piece ginger
  • 1 teaspoon turmeric powder
  • 1 cup vinegar
  • 4 tablespoons salt
  • 1 3/4 teaspoons oil

Method

  1. Heat a tablespoon of oil and sauté the red chillies. Drain, cool and powder. In the same oil saute cumin seeds, mustard seeds and fenugreek seeds. Cool and powder.
  2. Grind ginger and garlic to a paste. Heat some oil and saute ginger-garlic paste. Heat some more oil and saute the brinjal pieces till they shrink to half their size.
  3. Add the spice powder, red chilli powder, vinegar, salt and the sauteed ginger-garlic paste. Continue cooking until the mixture is well blended and the oil separates.
  4. Cool and store in airtight glass jar. This pickles lasts for 2 months.
