Ingredients
- 500 grams brinjals diced
- 50 grams whole dry red chilli
- 2 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 teaspoons fenugreek seeds (methi dana)
- 10 cloves garlic
- 2 inch piece ginger
- 1 teaspoon turmeric powder
- 1 cup vinegar
- 4 tablespoons salt
- 1 3/4 teaspoons oil
Method
- Heat a tablespoon of oil and sauté the red chillies. Drain, cool and powder. In the same oil saute cumin seeds, mustard seeds and fenugreek seeds. Cool and powder.
- Grind ginger and garlic to a paste. Heat some oil and saute ginger-garlic paste. Heat some more oil and saute the brinjal pieces till they shrink to half their size.
- Add the spice powder, red chilli powder, vinegar, salt and the sauteed ginger-garlic paste. Continue cooking until the mixture is well blended and the oil separates.
- Cool and store in airtight glass jar. This pickles lasts for 2 months.
