Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.
All this furore about Chinese food can make one wonder what is so special about this cuisine.  To put it in one word it is wholesome.  It has the characteristics of being nutritious, economical, balanced and delicious. It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Sesame Corn Toast Recipe

  • Bread Slices 8 slices

  • Sesame Seeds toasted 1/2 cup

  • Corn kernels boiled 1 cup

  • Potatoes boiled and grated 3 medium

  • Garlic crushed 4-6 cloves

  • Ginger crushed 1 inch piece

  • Onion finely chopped 1 medium

  • Green capsicum deseeded , finely chopped 1 medium

  • Fresh coriander leaves finely chopped bunch 1/4 small

  • Soy sauce 1/2 tablespoon

  • Salt to taste

  • Green chillies deseeded & chopped 2-3

  • White pepper powder 1/2 teaspoon

  • Cornflour/ corn starch 1/2 cup

  • Oil to deep fry

Method

Step 1

Crush corn kernels. Place them in a bowl.

Step 2

Add potatoes, garlic, ginger, onion and mix. Add green capsicum, coriander leaves, soy sauce, salt, green chillies, white pepper powder and mix well. Add two tablespoons of cornflour and mix.

Step 3

Cut bread slices into rounds using a lid of a jam bottle or a round cookie cutter. Mix remaining cornflour in one cup of water to make a thick mixture.

Step 4

Take each bread roundel, apply a little cornflour paste. Spread the corn mixture and press slightly. Spread sesame seeds in a plate.

Step 5

Press bread roundels in seeds so as to cover the corn mixture completely and pat seeds lightly. Keep coated roundels in the refrigerator for half an hour.

Step 6

Heat sufficient oil in a wok and deep-fry the sesame corn toasts till golden and crisp. Remove and place on an absorbent paper.

Step 7

Serve hot.
