What is the best thing one could rustle up in a hurry when hunger pangs are unbearable? The first thing that comes to mind is pasta! Believe it or not, it is the mainstay dish of all those who want a filling meal in a jiffy. What fascinates most food lovers is that it is available in a multitude of shapes, colours and now even flavours. The variety of shapes, sizes and designs include tubes, ribbons, spirals, shells, bows and wheels. Pleasures of pasta!

Ingredients for Pasta in Red Sauce - SK Khazana Recipe

  • Farfalle (bow tie pasta) boiled 3 cups

  • Tomatoes blanched, peeled and finely chopped 2 large

  • Tomatoes blanched and pureed 2-3 large

  • Olive oil 5 tablespoons

  • Garlic chopped 1 1/2 tablespoons

  • Onion finely chopped 1 large

  • Salt to taste

  • Castor sugar (caster sugar) 1 teaspoon

  • Paprika powder 3/4 teaspoon

  • Crushed black peppercorns to taste

  • Basil leaves 8-10

  • Garlic cloves sliced 4-5

  • Broccoli blanched 6-8 florets

  • Yellow capsicum cut into triangles 1/2 medium

  • Cherry tomatoes halved 3-4

  • Green zucchini cut into triangles 1/2 small

  • Red chilli flakes 1/4 teaspoon

  • Parmesan cheese 20 grams

  • Basil sprig for garnish


Step 1

To make red sauce, heat 3 tbsps oil in a wide pan, add chopped garlic, onion, mix and sauté till translucent. Add tomatoes and mix well. Add tomato puree, mix well and saute for 2-3 minutes.

Step 2

Add salt, paprika powder, castor sugar and crushed black peppercorns, mix well, and cook for 10-15 minutes.

Step 3

Add basil leaves, mix well and cook for 1-2 minutes. Take the pan off the heat.

Step 4

Heat 2 tbsps oil in another non-stick pan, add sliced garlic and sauté for 30 seconds.

Step 5

Add broccoli, yellow capsicum, cherry tomatoes and green zucchini and toss well.

Step 6

Add boiled pasta and toss well. Add the red sauce and mix well.

Step 7

Adjust salt and crushed black peppercorns. Sprinkle dried red chilli flakes and mix well.

Step 8

Grate parmesan cheese into the pan and mix well. Take the pan off the heat.

Step 9

Transfer into a serving plate, drizzle olive oil and garnish with basil sprig and serve hot with garlic toast.
