Ingredients
- 2 medium broccoli
- 8-12 small pieces of bocconcini
- 3 tablespoons butter
- 1 medium onion
- 8-10 garlic cloves
- 6 cups vegetable stock
- Salt to taste
- Crushed black peppercorns to taste
- 1 cup milk
- 2 teaspoons olive oil
- Slices of bread to serve
- Parsley sprig for garnish
Method
- Separate small florets from broccoli and discard their stems.
- Put butter in a soup maker. Roughly chop onion and add. Add garlic cloves, broccoli florets, vegetable stock, salt and crushed black peppercorns and cover with the lid.
- Select the desired option and let it cook for 4-6 minutes.
- Remove the lid and add milk, cover with lid, select the option and cook till the soup is done.
- Heat oil in a non-stick pan, keep the bread slices in it and cook, turning sides, till crisp on both sides. Keep them on a plate.
- Place 2-3 bocconcini pieces at the bottom of each serving bowl and pour the soup over. Garnish each bowl with a fresh parsley sprig and serve hot with toasted bread slices.
