Ingredients list for Papaya Ke Launj

  • 500 grams Raw papaya
  • Onion Seeds
  • 1 tablespoon Ghee
  • a pinch Asafoetida
  • 1/4 teaspoon Onion seeds (kalonji)
  • 1/4 teaspoon Mustard seeds
  • 1/2 teaspoon Cumin seeds
  • 5-6 Cloves
  • 1 teaspoon Red chilli powder (deghi mirch)
  • 1/2 teaspoon Turmeric powder
  • 3 tablespoons Sugar
  • to taste Salt
  • 1 teaspoon Aniseeds (saunf) coarsely powdered

Method

  1. Thinly slice the raw papaya. Parboil and drain. Set aside. Heat ghee and add asafoetida, onion seeds, mustard seeds, cumin seeds, cloves, red chilli powder and turmeric powder. Add two cups of water and stir. Add sugar and let it dissolve. Continue to cook till a syrup is formed. Add salt.
  2. When the sauce is done, add papaya slices and let it cook till the slices become tender. Add aniseed powder and stir. Let it cool completely before storing.
