Ingredients list for Nashik Zirka

  • 4 tablespoons White sesame seeds
  • 8 cloves Garlic
  • 4 Green chillies
  • 4 tablespoons Dried coconut , grated
  • 1/2 cup Fresh coriander leaves , roughly chopped
  • 3 tablespoons Oil
  • 1/2 teaspoon Mustard seeds
  • a pinch Asafoetida
  • 1/2 teaspoon Cumin seeds
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • 1/2 cup Peanuts , roasted and crushed
  • to serve Steamed rice

Method

  1. Dry roast sesame seeds in a small non-stick pan, on medium heat for 2-3 minutes. Transfer into a bowl and set aside.
  2. Grind garlic, green chillies, dried coconut and coriander leaves with ½ cup water to a coarse paste.
  3. Heat oil in another non-stick pan, add mustard seeds and once they start to splutter, add asafoetida and cumin seeds.
  4. Once cumin seeds start to change colour, add ground paste and cook for a minute.
  5. Add 4 cups water, turmeric powder, salt, crushed peanuts and allow the mixture to come to a boil.
  6. Grind sesame seeds to a fine powder and add it to the gravy. Cook for 2-3 minutes.
  7. Transfer into a serving bowl and serve hot with rice.
