Ingredients list for Mushroom Shagoti

  • 35-40 Button Mushrooms chopped
  • 10 Fresh Coconut
  • 10 Black peppercorns
  • 1/2 teaspoon Carom seeds (ajwain)
  • 1/2 teaspoon Fennel seeds (saunf)
  • 3/4 teaspoon Cumin seeds
  • 1 1/2 tablespoon Coriander seeds
  • 2 one-inch Cinnamon
  • 4 Dried red chillies
  • 1 1/2 tablespoon Poppy seeds (khuskhus/posto)
  • 1 cup Coconut scraped
  • 3 tablespoons Oil
  • 3 Onions finely chopped
  • 4-6 Garlic
  • to taste Salt
  • 1 tablespoon Tamarind pulp

Method

  1. Dry roast cloves, peppercorns, carom seeds, fennel seeds, cumin seeds, coriander seeds, cinnamon, star anise, red chillies and poppy seeds till fragrant.
  2. Add coconut and roast for two to three minutes or till the coconut is lightly browned.
  3. Heat oil in another pan.
  4. Add onions and sauté.
  5. Grind the roasted ingredients with garlic and a little water to a fine paste.
  6. When the onions are well browned add mushrooms and salt and stir.
  7. Add the ground paste and mix well.
  8. Add one cup of water, tamarind pulp and simmer for three to four minutes.
  9. Serve hot with pav or rice or sannas.
