Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Masoori Chi Godi Shaak Recipe

  • Whole Red Lentils soaked 1 cup

  • Scraped Fresh Coconut 1/2 cup

  • Onion chopped 1 medium

  • Cumin seeds 1 teaspoon

  • Red chilli powder 1 tablespoon

  • Turmeric powder 1/2 teaspoon

  • Garam masala powder 1 teaspoon

  • Salt to taste

  • Tamarind pulp 1/2 teaspoon

  • Oil 1 teaspoon

  • Garlic chopped 2 tablespoons

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Drain and put the lentils in a deep non-stick pan, add onion and sufficient water, cover and cook for five to ten minutes.

Step 2

Grind together coconut and cumin seeds, with sufficient water, to a smooth paste.

Step 3

Add red chilli powder, turmeric powder, garam masala powder and salt to the pan and mix well.

Step 4

Add little more water, mix, cover and cook for two minutes. Add tamarind pulp and mix well.

Step 5

Add ground paste, mix well and simmer for two minutes.

Step 6

Heat oil in a small non-stick pan, add garlic and sauté till it turns golden.

Step 7

Add sautéed garlic to the lentil mixture and cover the pan.

Step 8

Garnish with coriander leaves and serve hot with steamed rice.
