Ingredients
- 1 cup whole red lentils, soaked
- 1/2 cup scraped fresh coconut
- 1 medium onion, chopped
- 1 teaspoon cumin seeds
- 1 tablespoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- Salt to taste
- 1/2 teaspoon tamarind pulp
- 1 teaspoon oil
- 2 tablespoons chopped garlic
- 2 tablespoons chopped fresh coriander leaves
Method
- Drain and put the lentils in a deep non-stick pan, add onion and sufficient water, cover and cook for five to ten minutes.
- Grind together coconut and cumin seeds, with sufficient water, to a smooth paste.
- Add red chilli powder, turmeric powder, garam masala powder and salt to the pan and mix well.
- Add little more water, mix, cover and cook for two minutes. Add tamarind pulp and mix well.
- Add ground paste, mix well and simmer for two minutes.
- Heat oil in a small non-stick pan, add garlic and sauté till it turns golden.
- Add sautéed garlic to the lentil mixture and cover the pan.
- Garnish with coriander leaves and serve hot with steamed rice.
