Ingredients for Jain Vada Pav Recipe

  • Raw bananas boiled, peeled and grated 4

  • Pavs 8

  • Oil 1/2 tablespoon + for deep-frying

  • Mustard seeds 1/2 teaspoon

  • Ginger finely chopped 1 inch

  • Green chilli finely chopped 1

  • Curry leaves 8-10

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Gram flour (besan) 1 cup

  • Red chilli powder 2 1/2 teaspoons

Method

Step 1

Heat ½ tbsp oil in a non-stick pan, add mustard seeds and ginger and sauté for ½ minute.

Step 2

Add green chilli, curry leaves and turmeric powder, mix and sauté for 1 minute.

Step 3

Put raw bananas into a bowl, add the tempering and salt and mix well.

Step 4

Heat sufficient oil in a kadai.

Step 5

Put gram flour in another bowl. Add ½ tsp red chilli powder and salt and mix well. Add sufficient water and whisk well into a lump-free batter of coating consistency.

Step 6

Divide raw banana mixture into equal portions and shape them into medium sized vadas.

Step 7

Dip the vadas into the batter and gently slide into hot oil. Deep-fry along with the batter trimmings till golden and crisp. Drain the vadas and fried trimmings on absorbent paper.

Step 8

Put the fried trimmings in a bowl. Add remaining red chilli powder and crush coarsely with the back of a spoon. Add salt and mix well.

Step 9

Slit each pav horizontally, without cutting through completely. Spread the prepared fried trimmings masala on the insides of the pav and stuff with hot vadas. Press lightly.

Step 10

Arrange them on a serving plate and serve immediately.
